Food & Drink Peanut Sauce ½ cup low-sugar peanut butter 2 tablespoons low-sodium Japanese soy sauce ¼ cup sugar-free rice vinegar or apple cider vinegar Juice from 1 lime 1 large garlic clove 1-inch fresh ginger, peeled 1 small red chili, seeds removed (or half chili) ¼ cup brown sugar or brown sugar sweetener (sugar-free) ¼ cup water Protein of choice (grilled chicken breasts, shrimp, or fried tofu) In a large bowl, add all salad ingredients. Mix well. Cover and set in refrigerator until needed. In a mini blender, add all peanut sauce ingredients. Blend until smooth and adjust sweetness. Cover and refrigerate until needed. To serve, toss all salad ingredients together. Add favourite protein. Drizzle in peanut sauce. Serve chilled. Beverage Suggestion: This salad has too much heat and spice from the peanut dressing to pair with wine. Your wine would have to be super sweet to cut that heat and spice. Instead, pair your Summer Daikon salad with a glass of beer.
